Valrhona Ganache Recipe
Using Valrhona Tropilia 70% Dark Chocolate
STEPS
- 560g whipping cream 35%
- 95g Inverted sugar
- 535g TROPILIA 70% Dark Chocolate
- 95g Butter (diced)
INGREDIENTS
1. Melt the Tropilia 70% Dark Chocolate at approximately 45°C
2. Combine cream and sugar, and bring to a boil. Slowly combine with melted chocolate.
3. Using a rubber spatula, whisk until the mixture is smooth and glossy.
4. Use a blender or mixer to continue the mixing process.
5. Once the ganache reaches 35-40°C, add the diced butter and continue to blend.
6. Once butter is fully mixed, leave ganache to cool and set
