How to use:

Hydration Process: Disperse the powder into your cold or hot liquid base. For optimum results, use a stick blender to agitate the mixture vigorously for one minute to ensure even distribution.

Resting Period: Leave the blended mixture to rest in the refrigerator at 5°C for a minimum of 2 to 12 hours. This resting phase is vital for the fibres to achieve complete hydration and optimal texturising performance.

Freezing Applications: If using in frozen elements like ice creams or sorbets, always complete the full refrigerator rest before churning or freezing. The product prevents syneresis (weeping) upon thawing.

Standard Dosages: * General liquid preparations: 50–100g per kilogram (or per litre)

  • Meringues: 5–10% of total recipe weight
  • Mousses: 5–10% of total recipe weight
  • Ice creams and sorbets: 5–20% of total recipe weight
